We take BBQ seriously so that you will have a fine meal when you dine at When Pigs Fly BBQ & Wings located in West Jefferson, NC. West Jefferson is in the North-West corner of North Carolina in Ashe County.

We start with the best of pork and cook it in our own unique time-consuming way. We serve our BBQ with three different sauces – Eastern style, Western style and just plain Hot! It's fresh. It's tasty.

We think that quite possibly this is the best BBQ in North Carolina. Our customers at When Pigs Fly BBQ & Wings say flat out that this is the best BBQ they have had. Hubba-Dubba’s Hickory Smoked Pork BBQ

We only use the Boston Butt for our BBQ – and only Smithfield Butts will do! Unlike the pork shoulder or whole hog, the Boston Butt is perfect for chopped BBQ. Although the pork shoulders or whole hog are great for pork chops or sliced pork, they are not so great for chopped BBQ. They are too stringy when chopped and don’t come off the bone right for BBQ. We find that Smithfield’s Boston Butts are perfect. That’s all we will use. After we rub them down with Hubba-Dubba’s Secret Rub and slowly smoke them with real hickory wood, the meat falls off the bone for that perfect BBQ.

We smoke only enough for the day so that you get the freshest BBQ possible. In fact, we don’t even chop it until we are ready to serve it! Our BBQ is then brought to you flavored only with the hickory smoke and Secret Rub. You can then choose from one of Hubba-Dubba’s three homemade sauces:

  • Eastern NC Sauce--vinegar and spices
  • Hot Eastern NC Sauce--vinegar-based but with a kick
  • Western NC Sauce--tomato-based and sweeter

All BBQ items on the menu come with our homemade hushpuppies.

The Owner & the Name

For as long as he can remember Wilkes County resident Todd Hubbard loved cooking BBQ  and would cater church and civic events. After working in sales for years, Todd knew that he wanted a change and knew he wanted to spend full time cooking BBQ and feeding people. He identified West Jefferson as a desirable place to open a BBQ restaurant and based on his experience from catering on the side, Todd began serving wonderful BBQ to North Carolinians this past April.

One of the many details when opening a new restaurant is deciding what to name it. When he was telling a friend about his plan to open a new restaurant featuring barbecue and wings, the friend said, "Yeah, when pigs fly." Some weeks later as his plans developed, Todd called his friend back and said, "This is getting ready to take off, this pig's going to fly." Immediately when saying this, he recognized the name for the restaurant had just emerged – "When Pigs Fly BBQ & Wings".
